Basil Viniagrette Tomatoes
’tis the season for the very best tomatoes!

1/2 cup olive oil

1/2 cup fresh parsely-finely chopped

1/4 cup fresh basil-finely chopped

2 TBSP lemon juice

2 TBSP white wine vinegar

1 tsp. sugar

1/2 tsp. salt

1/2 tsp. white pepper

>5 large tomatoes, sliced 1/4 ” thick

1 Onion-vidallia or red-thinly sliced

Combine all ingredients except onions and tomatoes in jar with a lid. Shake to combine. Refrigerate at least 2 hours. Arrange tomatoe slices and onion rings on platter. Drizzle dressing over the top just before serving. Serves 16
